Hasselback Sweet Potatoes

So, I thought I’d be fancy and try a new twist on a favorite sweet potato recipe. I’d made these before, but they were just done with butter as I recall.

This year, I read a different recipe and it called for garlic, butter, parmesan and herbs, so I figured it looked nice and Christmas-y.

I should have made them after Dave got done with what he was cooking because the oven was set to 350° when I put them in with hs green bean casserole.

The potatoes just weren’t getting done in the time it said they should be, and when I reread the instructions, it said the oven should have been set on 425!!

Needless to say, they were still not done by the time we ate. I didn’t think of it until I ate again last night, but 4 minutes in the microwave per potato finished cooking them nicely.

If I ever do these again, I’m going with the butter, sugar, cinnamon recipe. I think it would be more tasty. I had a hard time with garlic on a sweet potato but the parm made a nice crust on top.
