The Case of the Tasteless Cookies
You know, I could claim mea culpa here but I’m not even sure I’m to blame on this one. Let me explain:
This morning I decided to make some Keto chocolate cookies, I checked the recipe and made sure I had all the required ingredients, I did. After reading some of the reviews, I learned that her recipe was too dry for many of the reviewer’s tastes, so I decided from the get go that 2 cups of almond flour probably was excessive.
I made the dough per the directions but cut it down to 1 cup of almond flour. I made no other changes, but decided to do an experiment. I had triple the amount of dough she said the recipe made. She said it would make 14 small cookies. I was using a tablespoon to measure out the dough, rolled into balls, then flatten out with a fork. Still, even after later additions to the dough which still would only equal what she originally intended, it made around 21 cookies.
Anyway, the first seven I made with the recipe she recommended, minus 1 cup of almond flour. I burnt them. Tossed them into the trash. The next 7 I made with an added 1/2 cup of coconut flour and a few Lilies chocolate chips, because the recommended amount of sweetener was not enough. (2T of Swerve). They turned out dry as a popcorn fart.
The last 7 I made, I added an additional tablespoon of butter and a few chocolate chips. Tasted like chocolate flavored sand. Now, I know that most Keto recipes are less sweet than store bought cookies, and I can usually take it. My palate is used to less sweet now. This, however, was so bitter, I could barely swallow it. What a waste of expensive, precious, ingredients. Instead of tossing it all in the trash, I kept them and decided maybe they could be put to use as a crumbled topping for some Keto ice cream or pudding. Maybe then they would be palatable!
I’m going to post the recipe so you guys can see, and or try, the recipe as it is shown. Then you tell me, if you’re brave enough to attempt them, how they worked for you! One other note-she “decorated” them with icing, but I didn’t feel like even that could save these unfortunate chocolate sand bombs. Was this really mea culpa?
Here is the original recipe:
Mix the softened butter, sweetener and cocoa together until smooth.
Add all other ingredients and mix well.
Roll mixture into 14 small balls, then place on a baking tray lined with baking paper. Press down with a fork.
Bake at 180C/350F for 15-20 minutes.
(Just to let you know, I used Hersey’s cocoa (unsweetened), Kerrygold butter, and Swerve granulated sweetener.) Good luck!
